FIRST UP---EASY ZUCCHINI BOATS----SERVE  these with a crusty bread and a simple tomato salad dressed with a drizzle of oil and balsamic vinegar, Heaven!  

And while we cannot (and will not) recommend a plant-based sausage substitute for this recipe---we do heartily endorse either the sweet sausage from Apple Farm---or the spicey sausage from A&S Fine Foods.
